▢ 1 tablespoon butter ▢ ½ cup Mexican-style chorizo or more to taste ▢ 1 teaspoon minced garlic ▢ 6 eggs ▢ salt and pepper to taste ▢ Monterey jack cheese shredded (optional)

Instructions Step - 1

Add butter to a large nonstick skillet and melt on medium heat.

Step - 2

Add chorizo and cook for about 5 minutes, or until browned. Add minced garlic.

Step - 3

While chorizo is cooking, add eggs to a medium bowl and whisk together.

Step - 4

Add salt and pepper and pour into skillet.

Step - 5

Cook and stir for about 4-5 minutes or until eggs are cooked.

Step - 6

Turn off skillet and top with shredded cheese, if desired. Remove from pan once cheese is melted. Serve warm. ENJOY
